Pub Pie Champion Craig Continues his Culinary Journey

Craig Hennessey has made a spectacular culinary journey in just a few short months, after being named British Pie Week’s 2011 Pub Pie Champion, in association with Jus-Rol™.

“It has helped me with my career because it has provided a stepping stone towards my ultimate dream of running my own pub. Having my name over the door is something I have always dreamed about and now I really feel I can achieve it.” 

Craig was working at The Queen’s Head Inn back in March, when his spectacular Cumberland Tattie Pot transformed his career by scooping top prize in the nation’s annual celebration of its pie-making tradition. 

Craig says the secret of his pie success is that “good pies need to be handcrafted: they are made using fresh ingredients bought locally to keep small companies in business”. He is hoping to encourage the same kind of close relationship with local food suppliers at Gilpin, and has already introduced local produce to the kitchen. 

Barney Cunliffe, Managing Director of Gilpin Hotel and Lake House said;

“Craig has a lot of natural talent which our head chef, Russell Plowman, very much hopes to nurture. Craig has a clear passion for local produce and that’s something he’s brought to Gilpin when he gave Russell and the team local Scotch Pheasant Eggs, our guests thoroughly enjoyed them for canapés that evening. I think he has a great future.” 

Craig recently achieved City & Guild level 2 NVQ Professional qualifications and received a Student Award for ‘Most Naturally Gifted Young Apprentice’. It was his college lecturer that recommended him for the job at the Gilpin and surprised him with his award. “I am now focusing on getting as much experience as I can, Russell has been really great, he’s taken time to train me and I’m learning new skills all the time – I’m really excited about the future.”
