Pastry Perfect Panel - The Sandrock

Deep in the Surrey countryside in Farnham sits The Sandrock; a traditional ale house owned and ran by Carol Haime and her partner David Walton. In the last seven years Carol and David, along with a committed team of eight, have reinvented the Sandrock from an old man’s watering hole to a community pub renowned for its unusual ales and innovative menu.

By keeping the pub as a traditional ale house and slowly introducing a menu inspired by local suppliers, Carol and David have developed a successful business with food making up 30% of the pub’s profits.

"Food is incredibly important to us as a business, in this financial climate I don’t think any pub can survive without food trade. We average 270 covers a week and do corporate catering as well. We have built the Sandrock’s reputation on good, home cooked food using fresh ingredients. It not only helps us stand out in a very competitive area but more importantly it enables us to make a GP of 60% by keeping to seasonal ingredients."

Always on the look out for new inspiration and exchanging ideas Carol joined Jus-Rol Professional’s Pastry Perfect Panel,

"Pastry is so important to any dish, your ingredients can be fantastic but if the pastry casing is awful the whole dish is ruined. I was really interested to see what Jus-Rol Professional had been developing and be a part of shaping products they create in the future."

For three weeks Carol and the team tried and tested three new Jus-Rol Professional products: the intricate Twisted Corner Basket, Shortcrust Oval and the Shortcrust Flan Case. Using these products as the basis for her inspiration Carol was surprised with just how many new recipes she developed.

"The trial was really interesting as we came up with a number of recipe ideas using the three products. Normally, when I’m looking for new ideas I visit the local food market to find unusual ingredients but my greatest passion is vegetarian food, I’m vegetarian and too often when I eat out there is only the option of a salad, lasagne or curry which is hardly inspiring. This is why I work hard to ensure there are lots of unusual vegetarian dishes on my menu."

Using the Shortcrust Oval as a base and lid for a winter warming pie recipe, Carol developed a Spinach, Feta and Pine Nut Pie with a Piquant Red Pepper Sauce for her Autumn menu.

"Meat dominates pie recipes," explains Carol, "so I wanted to come up with something a little bit different as we move into our Autumn menu. The feta gave the pie a great deal of flavour and I use mace which is a bit of an unusual ingredient but it works well with the spinach. The pie made a popular dinner dish, especially with our female customers, I also found the ovals ideal for miniature pasties and salmon parcels which I used for a couple of buffets; they were really quick and saved a great deal on cutting time."

Keen to offer something a little bit different Carol was also impressed with Twisted Corner Basket.

"I like the Twisted Corner Basket; it is a very quirky product and looks attractive on the plate. People eat with their eyes which is why the presentation of this product is perfect for chefs looking for something that will give the wow factor. You can put anything in the basket sweet or savoury, my favourite filling being Garlic Portobello Mushrooms and Mascarpone - It made a great light lunch and a delicious hot starter. The Shortcrust Flan Case I thought was brilliant for knocking up a quick dessert; you just blind bake the case and add your filling. I created a Chocolate and Grand Marnier tart as well as a Raspberry cheesecake tart which will definitely be making an appearance on my dessert menus in the future."

So would Carol use Jus-Rol Professional in the future?

"I would recommend these products to any chef, in this financial climate anything that can save money and time is worth trying. Jus-Rol Professional products are an excellent time saver and make a great basis for creativity - in all honesty when it comes to the more tricky pastries you won’t do any better and sometimes quite the opposite!!"
