Shape It Up - The Donkey

As pubs become increasingly competitive in their food offerings keeping a menu that is fresh and appealing can be a challenge, but one pub in Farnham, Surrey may have found the answer...

As soon as you walk into The Donkey, you are welcomed by landlady Helen Francis, who along with husband Lee has successfully run the quaint, country pub for over 9 years. Having been in the catering industry for over 23 years, Lee has built up The Donkey's reputation for hearty, home cooked food with a restaurant that averages 450 covers per week. "I use seasonal produce and prepare everything myself. Home made can bring its own challenges though." says Lee; "Keeping a steady flow of fresh ideas can be difficult, especially when you need to consider prep times, ingredient costs and the appeal of the dish."

With an established customer base to keep impressed, Lee welcomed the opportunity to trial Jus-Rol's Shape It Up menu ideas and put some new and exciting pastry dishes on his Specials Board.  Using Jus-Rol's pre-rolled Puff Pastry Shapes, Lee tried and tested 9 recipes including Cheese, Tomato and Bacon Wraps, Goats Cheese and Aubergine Windmills, Chilli Mince ‘No Dish’ Pies and Caramelised Peach Tarts.

"The Shape It Up recipes were easy to follow, and I was impressed with how quickly we could turn the dishes around. Because the pastry shapes saved on prep time and the results were consistent, it meant I could make them to order, so there was no waste! There was something for every time of the day, the Cheese, Tomato and Bacon wrap made a great brunch snack and the Caramelised Peach tart a delicious seasonal dessert. I was particularly impressed with the vegetarian recipes; as they offered something really different."

In fact one dish made up 1/3 of lunchtime orders "The Aubergine & Goat's Cheese Windmills were very popular, they look impressive but were really simple and quick to make - the dish will definitely be going on my menu!"

Jus-Rol's Puff Pastry Shapes are available in round, square and oval formats and for Lee they've brought a new approach to pastry recipes, "The shapes are ideal! I'll be using them again following the success of the trial and I would recommend them to any pub chef. The truth is with Jus-Rol you don't have to be a pastry expert to create something really great."
